The positive impact that have occurred associated with food processing are the expectations of the modern consumer and industries to fulfill aesthetic and health benefit. In addition, the increasing evidence for the health benefits of varieties of food processing and resources are always attracting great interest due to their bioactive compounds.

The flourish research into discovering the mechanisms behind these observed benefits is always attracting food researchers to expose. Knowledge on the changes in properties of food appears to keep up behind its processing technology and stimulating researcher to explore. Beside food processing, fruit and vegetable which is the most heterogenous products among countries contribute to the food processing against health of consumers. More knowledge of the change in nutrient and phytochemical composition has been explored to produce specific health effects. The data obtained from various research may provide useful tool for promoting consumption. Effect of various techniques on processing of food including vegetable and fruits are needed to be always elucidated to convince the evidence that the technologies in processing are playing a beneficial role to human.

The 4th International Symposium on Processing of Food, Vegetable, and Fruits is conducted to expose various results from recent research. Therefore, the aim of this symposium is to gather useful information on the results from international food researchers.
